Ay is a small vilage in the Champagne region. It is probably best known as the home to Dom Perignon's tomb. it is also home to the grapes for Bollingers top wine. It is arguably the best wine that the brothers Bereche produce. Looking back there is probably an arguement to be made for "Antan", anyways the wine is good, very good. it is mainly Pinot Noir with a small amount of Chardonnay. Prmary fermentation in done in oak barrels. it spends 72 months on lees and was disgorged in october of 2022. it is hard to describe. White flowers, good white fleshed fruit with a splash of red berries. There is a touch of creaminess and toast from the lees agng and a very slight hint of vanilla. Less than 4000 bottles made.
